Don't you love the beginning of spring? Springtime is when I feel re-energized! It feels so good to move from hibernation mode into planting mode - working in my garden or simply putting a pot of tulips on the dining table.

Spring is when I like to switch from my winter vegan recipes that tend to be heavy on the "comfort food" side, to lighter fare, like salads, fruits, and veggies. Warmer weather calls for colorful dishes which embrace the goodness that spring brings, which includes outdoor entertaining!

Some of my fondest memories are backyard springtime parties with my relatives. When I became vegan, I didn’t want to give up enjoying our traditional family recipes, so I decided to find ways to re-create them using all vegan ingredients. I knew I got it right when I veganized my Mom’s fabulous carrot cake, as well as fantastic her potato salad, egg salad, and macaroni salads. Everyone in the family agreed, they tasted as good if not better than the original recipes.

There is something invigorating about this time of year. It's uplifting to step outdoors and see Mother Nature breathing new life into our environment. I love hearing the calls of migratory birds returning and seeing new leaves and buds and fruits appearing on our citrus trees and strawberry plants.

Watching the hummingbirds and bees out and about gathering nectar from flower blossoms in our yard inspired my husband to create his own sweet & delicious vegan "bee-free" clover honey. It's so lovely on top of my favorite vegan British scones, warm from the oven. Like a nice bright sunny spring day!
