I love making muffins like these. They satisfy my sweet tooth, and, this recipe makes the perfect amount – 12 perfect sized muffins. That’s enough for a dessert and then breakfast again the next morning.

Feel free to jazz these up to your own personal preference. The addition of chopped nuts would be tasty or sprinkle them with a mixture of cinnamon and sugar right before they go into the oven for little crunchy topping.

How to Make Double Chocolate Banana Muffins

Step By Step Instructions

  1. In a medium bowl, combine buttermilk, oil, beaten eggs and vanilla; add all-bran cereal and let sit for 5-10 minutes to soften.
  2. To the softened all-bran mixture, add mashed bananas.
  3. Combine flour, sugar, cocoa powder, baking powder, baking soda and salt in a separate bowl.
  4. Add the flour mixture to the wet ingredients, and beat until smooth.
  5. Mix chocolate chips with 1 tablespoon flour; stir into the batter.
  6. Fill muffin tins lined with muffin cup liners 2/3 full.
  7. Bake in a 400 degree F oven for 12-14 minutes or until a toothpick comes out clean.
