Why This Recipe Works
I first tasted Roasted Chipotle Salsa at Rubio's restaurant, and it was love at first bite. This wasn't a flavor I could buy in a grocery store salsa, so I recreated it at home. This recipe comes together quickly and tastes very similar to the one served at the restaurant. You'll love serving this restaurant style recipe up with Baja Fish Tacos and chips.
About The Ingredients
All of the chipotle salsa ingredients can be found at your local grocery store. Here are a few items to note:
Canned Chipotle Peppers - this is the main flavor of the salsa. You can find canned chipotle peppers in ethnic foods aisle at the grocery store. You are going to use a few of the chipotle peppers in the can and some of the adobo liquid in the can.
Canne Fire Roasted Diced Tomatoes - this gives the salsa a smokey flavor and a lot of depth. These can be found near the canned tomatoes at the grocery store.
Roma Tomatoes - I chose Roma tomatoes for this recipe because they are nice and firm and will hold up nicely during roasting.

How To Make Roasted Chipotle Salsa
Step 1: Cut your fresh tomatoes and onion in to quarters. Place on a baking sheet along with garlic cloves.
Step 2: Place under the broiler of your over and cook until the tops are charred.
Step 3: In a blender jar or food processor, add fire roasted tomatoes.
Step 4: Add lime juice.
Step 5: Add chipotle peppers and adobo sauce.
Step 6: Add cilantro.
Step 7: Add roasted vegetable to the blender jar.
Step 8: Add salt.
Expert Tip: Don't be afraid to salt this salsa. Start with the amount in the recipe card, and then after you have blended, taste and add more if desired. The salt really enhances the smokey chipotle flavors flavors.
Step 9: Pulse on blender until the consistency is pretty thin.
Step 10: Serve with tortilla chips, tacos, or burritos.

- 14 ounces fire roasted tomatoes canned
- 3 Roma Tomatoes
- 1 Onion
- 3 cloves garlic
- 4 chipotle peppers in adobo plus 2 tablespoon of the adobo sauce
- 1 bunch of cilantro
- 1 lime
- 1 tso salt to taste
- ½ teaspoon ground black pepper
Instructions
Combine all ingredients in a blender and puree.
Transfer to a container and refrigerate.
Notes
Leftovers will keep in an airtight container for about a week in the fridge. This is a fresh salsa, not a canned salsa - so make sure you store it in the refrigerator.
