Taco Soup is a family favorite around my house. During the winter, I like to put it in the crock pot early Sunday and let everyone munch on it all day any time of year. If friends show up, you can just hand them a bowl, because this recipe makes a lot of slow cooker taco soup!

If you’re looking for a fun variation on this recipe, you should TOTALLY check-out Shockingly Delicious’ recipe for Slow Cooker Black-Eyed Pea Taco Soup–it sounds so fantastic, I might make that this weekend instead of my normal Crockpot Taco Soup!

I am all about cooking with my crock pot. I like things for cook slow and over time, because it makes them so flavorful, I am so not a pressure cooker kind of gal.

What You Need To Make Slow Cooker Taco Soup Crockpot Dinner

  • 1 lb. ground beef, Cooked (or ground turkey if that’s more your thing)
  • 1 Large Onion, Chopped (Sometimes I cook this along with the beef, and sometimes I leave it out, it just depends on what kind of mood you’re in, really.)
  • 1 Can Pinto Beans (You can substitute black beans here instead if you just really love them.)
  • 1 Can Kidney Beans
  • 1 Can of Corn (But you can totally leave this out if you hate corn. I am so not a corn lover, but everyone else in my family loves it, so I always leave it in. I also feel this way about black olives, and that’s why I never add them to my taco soup.)
  • 1 Can Ro-Tel (Really any spicy diced tomatoes and diced green chile combo will do, but I always just use Ro-Tel tomatoes green chile, because that is what my mom used to use.)
  • 1 Can Diced Tomatoes. (I usually get a big ‘ol can for this if I am having lots of people, or I just use a smaller can if it’s only the fam.)
  • 1 Packet Taco Seasoning Mix
  • 1 Pack Ranch Dressing Mix. (This is the secret ingredient that gives the soup it’s special zing! Don’t leave this out unless you want blah soup.)
  • 1 1/2 Cups Water

How To Make Slow Cooker Taco Soup with Rotel

  • In a large skillet, brown your meat. (This is the part where you can add in the onions or not. I like to, just because I love the smell of ground beef and onions cooking.)
  • Open all the cans and dump everything into your crock pot. Juice and all.
  • Let it sit on high for an hour or two then turn it down to low and you have the best darn crock pot taco soup you’ve ever eaten!

I usually serve mine with tortilla chips, but my husband swears by corn chips, so it’s kind of your choice there. He also loves to add just a dollop of cream cheese to his bowl to make it just a little creamier.

FAQs

Will taco meat dry out in crockpot? ›

Taco meat can dry out if you don't add extra water to the slow cooker. I suggest adding water before turning on the heat.

What can I use to thicken taco soup? ›

How do you thicken taco soup? You shouldn't need to thicken this taco soup—the meat and vegetables make it pretty chunky. If needed, you can add refried beans, other mashed beans or rice to thicken it up.

How to make taco soup less spicy? ›

Add Some Starches

The easiest way to tone down a spicy dish is to serve a smaller portion with plenty of rice, bread, potatoes, pasta, or plain starch to counter the heat. For soups and stews, raw and starchy vegetables like potatoes or carrots work well.

How long to reheat taco soup? ›

To reheat it from the refrigerator, pop it into a crock pot on medium or microwave it on high for 90 seconds. You can also reheat it on the stove; use a soup pot or Dutch oven and heat it on medium for 10-15 minutes. You can reheat previously frozen taco soup in a slow cooker, on the stovetop, or in the microwave.

Can you put uncooked ground beef in the crockpot? ›

What is the thickening agent for taco meat? ›

A typical 12-serving taco seasoning mix recipe uses about 1 ½ tablespoons of cornstarch. If you want to skip the cornstarch in your homemade seasoning to use it for other purposes, just sprinkle ⅓ to ½ teaspoon of cornstarch per pound of browned, spiced meat before adding ¾ cup of water and heat until thickened.

Why is my taco soup so watery? ›

Simmer for Longer

Addition of Cornstarch or Flour: Create a slurry by mixing equal parts cornstarch or flour with water. Stir this mixture into the soup and let it simmer for a few minutes until it thickens. Ensure there are no lumps by gradually adding the slurry while stirring constantly.

What cancels out spicy in soup? ›

Turns out, the fiery chemical in hot chilis, capsaicin, likes to bind itself onto a compound in milk, which neutralizes the burn. Add a generous dollop of sour cream, creme fraiche, or yogurt to scorching hot chili or stews, or even a touch of milk or cream. For best results, though, go with full-fat dairy.

Does adding water to spicy soup make it less spicy? ›

Peanut, almond, or cashew butter are all rich in fat and can help dissolve capsaicin and mitigate some of the heat from chiles. If you're hesitant to add fat, you can also dilute the heat of a curry or stew by adding more water.

Is it OK to leave taco soup out overnight? ›

Food should not be at room temperature for more than two hours. Shallow containers or small amounts of hot food can be placed directly in the refrigerator or rapidly chilled in an ice or cold water bath before refrigerating.

Can you eat taco soup that was left out overnight? ›
