I know what you’re thinking, “Who adds coconut to a mint chocolate chip combination?!”.
Well, my friends, that would be me and my sweet tooth throwing a wild co*cktail card at you.
It’s much like adding a splash of jazz hands to your next happy hour, if you will.

Easy Mint Chocolate Chip co*cktail Recipe
I was originally inspired to make these for a fun twist on a Saint Patrick’s Day co*cktail, which I think turned out super cute and easy to make!
For a sweet finish to your St. Patrick’s Day celebration, why not indulge in some marbled creme de menthe ice cream?
For added rainbow fun, I used the Airheads Extreme Sour Candies and a mint sprig to make the garnishes match the rainbow macaron theme.
It’s no pot of gold. But it’s a fun experience nonetheless!
Ingredients to Make Mint Chocolate Chip co*cktail Recipe
Dark rum
Green creme de menthe
Rumchata coconut creme liqueur
Half and half
Fresh Mint and Chocolate Flakes for garnishing
How to Make Mint Chocolate Chip co*cktail Recipe
Step 1 — Pour ingredients over ice in a co*cktail shaker and mix thoroughly.
Step 2 — Strain and pour into a co*cktail glass, then garnish.
Fair warning: DO NOT mix the airheads with the Coconut Mint Chocolate Chip co*cktail.
It will take you a solid five minutes to get that awful taste combo off of your tastebuds.
They do look pretty, though, right?!
